Takko Town can be found in the foothills of the Ōu Mountains at the southernmost end of Aomori Prefecture, where Iwate Prefecture to the south and Akita Prefecture to the west meet. With a population of roughly 6,000 and 80% of its land consisting of mountains and forests, the specialty product of Takko Town is garlic, owing to its abundant water resources. Aomori Prefecture produces 80% of Japan’s garlic, and Takko Town was recognized as “the garlic village” in 1962 thanks to its cultivation efforts.
The town’s representative variety is Fukuchi White Roppen (Six Clove) Garlic. The cloves are planted from mid-September to mid-October, then harvested in late June to early July the following year. They make it through the winter in the snow-covered fields, giving them time to grow slowly in the intense cold temperatures, resulting in a sweet flavor with little pungency.
